"Sharing our leftovers..."

The Hidden Mushroom

After checking out a few recipes this weekend. My wife had the winning vote. This mushroom/onion burger was a hidden gem on flavor with a solid yet sloppy finish. You'll see by the double patty and melted cheese center that it was already going to be delicious, but add into the meat, Sauteed Mushrooms and Onions, layered on the bottom bun was a spread of Mayo/Tomato Paste/Sauteed Onions & Lettuce and you've got a Hidden Mushroom burger!


  • 1lb Organic Chopped Meat
  • 8oz Shiitake Mushrooms, stemmed
  • 1 small onion, finely chopped
  • 3 tbs of reduced-fat Mayo
  • 2 tps tomato paste
  • 1 tbs olive oil + 1 tps olive oil
  • 4 - 3" potato rolls, split in half
  • 1/2 head romaine lettuce, shredded
  • 2 oz sharp cheddar cheese, shredded
  • 2 dill pickles, thinly sliced
  • Preheat grill to medium
  • In a large nonstick skillet, heat 2 teaspoons of olive oil over Medium heat then Add Mushrooms; season with Pepper and cook, turning occasionally, until browned and tender (about 5 minutes).
  • Then Add 2 tablespoons of Water and cook until the water has evaporated, turning the mushrooms once.
  • Transfer the Mushrooms to a cutting board to cool, then finely chop and set in bowl with the Chopped Meat.
  • Add 2 teaspoons olive oil to skillet and add the Onion and season with Pepper. Cook over Medium heat until tender and golden (about 3 minutes).
  • Add Half of the cooked onion to the Mushrooms and Chopped Meat, season with Salt and mix well. Form meat into a ball then cut into 8 portions, forming 3- to 4- inch patties. Set aside ready to grill.
  • Transfer the remaining half of the Onion to a small bowl. Add Mayo and Tomato Paste and stir. Spread the sauce on both faces of the rolls. Also placing half of the shredded lettuce on the bottom faces of the rolls only.
  • Grill patties for 2 minutes on one side. When turning over, place the Shredded Cheese onto 4 patties and cover with Foil until the cheese melts (cooking/melting time about 1 minute).
  • Remove from grill, placing the cheese covered burger on the bottom, then stacking the second burger on top. 
  • Place sliced pickles and remaining lettuce on top and serve!

Kirby's - Juno Beach, FL

As advertised: They have ice cold beer and delicious food!
Kirby's was mentioned to me by a co-worker who hyped up the Fish Sandwich, but as you know, we're all about the burgers. So after checking out their menu, I was shocked to see a nice selection of burgers, and not your typical bar burgers either...

Yep, you read that right! Kirby's Surf & Turf Burger with Crab Meat, Jack and Cheddar Cheese! SOLD!!!

It was cooked exactly to order. Not grilled but the Angus beef was perfect. I was skeptical about the crab but it was seasoned well and really mixed right with the cheese. I was pleasantly surprised with the burger! Great hidden gem in Juno Beach, FL. 

I can't forget to mention the home cooked "Kirby's Potato Thingies" chips. Great touch! We'll be back to try out the St. Patty Melt & Blackened Blue Cheese Burger very soon!

Tiki Waterfront Sea Grill - Riviera Beach, FL

Decided to take a long lunch and head over to a quit little spot on the docks in Riviera Beach. The Tiki Waterfront Sea Grill is hidden deep within Riviera Beach. If you've been to Peanut Island, then you've probably been here. You can see the inter-coastal island from your seat.
The Tiki-Burger Special was topped with Cheddar Cheese, Grilled Onions and Bacon. After a promising pat on the back for the chef from our waitress, I went for it. What was nice about the burger was that you can tell it was grilled. Not cooked. Fresh and juices pouring out with each bite. Super crispy bacon and a side of slices pickles to top it off.

Cheeseburger - Key West, FL

Right on Duval St in Key West, this place is not hard to find (5 locations in Hawaii, 1 in Vegas and 1 in Key West). Great outdoor seating (if you can stand the heat) with views of the Duval St. crowd.  We found ourselves down in Key West for Lobster Fest and had to make a stop here to try out the burgers... True Hawaiian flavors crowd the menu with a touch a Key West flare (conch fritters were a bit unauthentic). They were sold out of the souvenir Pineapple Cups but did have a cool plastic mug that changes colors when it gets cold. Its a great way to know if your beer is warm...

We dug right in and ordered. I got the Pineapple Burger - topped with Teriyaki Sauce, Grilled Onions, lettuce and Grilled Pineapple. The burger itself looked huge but was deceiving. It was cooked medium-well (wasn't asked how I'd like it) and was hidden behind the massive grilled pineapple. Overall it become a sloppy burger with great taste.  Just clean up a few things and would be perfect.

The decor was impressive. You really step right into the Hawaiian lifestyle. Palm trees, surf boards, old classic beach decor. Even a little doggie treat-burger bar on the street... Well done but too flashy for Key West. Most of the bars/restaurants at open air, sit at the bar, get a frozen beverage & kick your shoes off to relax kind of places. This is a true restaurant dropped right into the middle of it all. So if your in the mood for food, check it out. But if you need a drink... Duval St has PLENTY of other options.

Jacks Old Fashion Hamburger House

This hidden gem is east of 95 in Pompano Beach, FL.

The meat quality is why people keep coming back. As we were ordering I over hear, "I'd like to order 6 1/2lb burgers to go." Who does that? People drive from alll over for this old fashion classicly made burger. They put the cheese on the bottom so the toppings don't run off. They have a condiment bar with Jalepenos, Chopped Onions, Pickles and their famous Mustard Relish. 

There's only one way to order the burger - Well-Well Done.

Top the burger off with the mustard-relish, onions and ketchup and you've got one of our favorite burgers in South Florida. Hands down, tops out list! Back to the basics, great meat, grilled well and topped with a homemade mustard-relish.
